RECIPE - Vietnamese Glass Noodle Salad

Asian Grocery to your door present Vietnamese Glass Noodles Salad. Glass Noodles is also called as Chinese Vermicelli, it's thin and flexible when cooked and it's very popular for Asian Spring rolls.




Vietnamese Sauce (Nuon Cham)

1 Juice of fresh lime

4 cloves of garlic

1 Red Chili (cut into thin slices)

3 tablespoon Golden Fish sauce

4 table spoon Sugar

6 table spoon of boiled water


Noodle and vegetable Ingredients:

1 Carrot, chopped into strips 

1 Cucumber, chopped into strips

500g bean sprouts

500g Mock Chicken Meat

500g Kaset - Bean Thread Glass Noodles 





3-4 Sprigs of Coriander



Step 1:
  • In a bowl, add the sugar into the fish sauce and stir until the sugar is dissolved. Add water garlic, chili and lime juice and then mix well.

* The saltiness of the fish sauce are different it depends on the brand but with Golden Fish Sauce has a really good taste when it comes to the Vietnamese Sauce.


Step 2:
  • Soak the glass noodles in a bowl of warm water for 15 minutes, strain the water from the noodles and then use a pair of scissors to cut the softened threads to the desired length.  


Step 3:

  • Place the glass noodles into bowl along with the carrot, cucumber, bean sprout and mock chicken, you can also add some Vietnamese sauce to taste and sprinkle with garnishes.
